Hjembakt Brød med lav glykemisk indeks. - Home Baked Rough Bread low on gluten.


Til uken blir det kasserolle med fiskesuppe. Favoritt i denne heimen (oppskrift kommer senere). Men, det viktigste av alt til suppe er godt ferskt grovt brød. Selvfølgelig ble dette bestemt i helgen etter at butikkene hadde stengt. Heldigvis er det aller kjekkeste med brødbaking at der er rom for improvisasjon og slingringsmonn! Ty til det kjøkkenet har av kornsorter, frø,nøtter m.m.
I mitt brød ble det sammalt hvete, rug, grovt rugmel, hvetemel, solsikkekjerner, valnøtter, gresskar,sesamfrø,linfrø,litt salt, kefir(1 liter gir to former brød), natron og litt lys sirup(maks.1/2 dl). Teksturen i dette brødet litt grovere enn vanlig, men det venner du deg fort til.
Sist, men ikke minst havrekli, og store havregryn. Havregryn er mye brukt her i huset. Lav glykemisk indeks som holder blodsukkeret stabilt! Kjekt å vite, men det beste er at brødet er så godt at du får alltid lyst på ei skive til.

Saftig brød! Hell litt kokende vann over det grovmalte sammalte kornet, og la det stå til neste dag. (Rør av og til).

Fish Casserole is on the menu next week (recipe will be posted later). And, fresh tasty bread is always a compliment with soup. Of course, this was decided after the shops had closed (In Norway shops are closed after 08:00 p.m. Saturday till Monday) this w/e.
Fortunately, the best part of homemade bread is the possibility for improvisation. Find grains,seeds,nuts, etc., hidden in your kitchen, and have fun baking!
My bread is low on gluten and filled with whole wheat, rye, whole meal rye flour, wheat flour,sunflower seeds,walnuts,pumpkin seeds,sesame seeds,linseed,salt, buttermilk(1 litre provides two bread),baking soda and a little light syrup (max. 1/2 cup). The texture of this bread is a little rougher than usual, but it is delicious.
Last, but not least, oat bran and large oatmeal. In this home oat is a favorite. Low glycemic index keeps your blood sugar in control. Good to know, but the best is the bread is so tasty that you will always want more!

Juicy Bread! Pour hot boiling water over wholemeal wheat and leave it overnight, (Stir occasionally).
